2 tbl. Coco Loco (Healthy Spice Blends)
mix 1 tsp. sugar or agave nectar
pinch salt
4 oz. milk
1 oz. your favorite Tequila
1 cinnamon stick
1 ancho chile pod
Combine Cocoa Loco mix, sugar/nectar, salt, and milk in saucepan. Heat to medium, throw in chile pod and simmer 10 minutes. Remove chile, pour over tequila, add cinnamon stick, stir, and serve. May be served hot, or as an iced beverage.

2 lamb shanks
2 cups blanched peeled tomatoes
2 cups water or beef broth (or veggie broth)
2 tbl. Vata Mexican mix
salt to taste
4 carrots cut in 1/2"-3/4" chunks
2 cups potatoes cut into 1-2" cubes
1 onion quartered and quartered again
Salt and pepper lamb shanks and dust with flour. Sear in olive oil on all sides. Add spice mix and saute 2 minutes. Add tomatoes, broth, onion, carrots and salt. Simmer 3 hours. Add potatoes, cook 1 more hour. Remove potatoes and mash coarsely. Remove meat and veggies and return 1/2 cup mashed potatoes to broth. Cook down until thickened. Serve meat, veggies and sauce over mashed potatoes. Enjoy!
